Best Dish: Mindy's Muffins

They say "good things come in small packages" 
and these muffins are GOOD!


Congratulations to Mindy Sebastian for receiving this year's FIRST Best Dish!

If you're anything like me, you search high and low for recipes that are both easy to make and delicious to eat.  Well look no further friends.  These muffins are small enough for your kids to eat and big enough for your appetite.    


SAUSAGE EGG MUFFINS

Ingredients:
1 lb of sausage
10 eggs
1 cup of chopped onions
1 teaspoon of garlic salt
1 can of rotel (tomatoes and peppers)
1 cup of shredded (fiesta blend) cheese
Salt and pepper to taste

Directions:
  • Preheat oven to 350°F
  • Cook sausage first.
  • Mix all ingredients together.
  • Spray pan well to prevent sticking.
  • Fill each muffin cup halfway (I used mini muffin pan).
  • Cook for 20 minutes
  • Remove from oven and immediately remove muffins from pan
  • Enjoy :)

*I felt like hot sauce or salsa would also be great to serve with these.
